Join us as we kick off the season with an unforgettable, first time ever, Sunday Sparkling Brunch experience on the breathtaking grounds of Rava Winery + Events in Paso Robles.
Chef Mateo Rogers & Brittney Yracheta of Heirloom and Momotaro Ramen will prepare a delicious farm-to-fork menu starting with passed bites at our welcome reception, followed by a 4-course plated brunch. Each course will be paired with the beautiful sparkling wines from Rava Winery.
Beautiful food, tantalizing bubbles, surrounded by spectacular vineyards... how else would you want to spend your Sunday?
Chef Mateo hails from the produce laden central valley and made his way to the central coast via Los Angeles. Mateo began his diverse career in the kitchens of Los Angeles, most notably with SBE restaurant group who managed the hottest restaurants in LA at the time. His resume spans restaurants like those of Katsuya, Cleo, Mercato di Vetro, Barton G Miami & Los Angeles and Spaghettini Beverly Hills. Upon arriving to the central coast, Chef opened The Hatch as head chef and led the kitchen for two years. Upon leaving the Hatch, he teamed with baker Brittney Yracheta to form Heirloom Catering.
Brittney attended the acclaimed patisserie and baking program at Le Cordon Bleu Culinary Institute. She returned to the beautiful central coast to pursue her career in baking. She found herself at Back Porch Bakery, an ever growing locally owned bakery. For the next four years, Brittney immersed herself in perfecting her craft and specializes in artisan breads and classic French pastries. It was while baking bread for the Hatch that she met Mateo and unbeknownst to her found a partner. Together their love of food and each other led them to unite their passions and create Heirloom Catering.
Heirloom Catering thrived on the central coast and created relations with all their guests who had the opportunity to try their food. With catering always being a steppingstone for their dream, opening a brick & mortar, they had the opportunity to open their first. Insert Heirloom Kitchen & Eatery.
A local eatery utilizing the best locally sourced produce and proteins to offer simple no nonsense food. Being located on the busiest corner of the West side of Paso Robles, Heirloom looked to offer a new perspective of fun fresh wine country food. Unfortunately, Heirloom Kitchen & Eatery closed during the pandemic but there may be plans to resurrect the concept at the request of many locals.
All the while, the duo continued plotting their newest addition, Momotaro Ramen. A Japanese ramen bar in the heart of Paso Robles. The namesake hails from the story of Momotaro which translates to Peach Boy. It is a story that Chef Mateo’s grandmother, Yuriko, would read to him as a child. Whenever she read it to him it always brought on a feeling of comfort. When choosing the name for the ramen bar it was really important to convey to guests a feeling of comfort as they enjoy ramen because that is what ramen is… a comfort food.
Momotaro Ramen was created as a necessity and executed with kokoro- meaning heart and soul. Putting their hearts and souls into every dish.
Rava Wines is the first winery in Paso Robles to focus on sparkling wines crafted using the time-honored méthode champenoise technique. The cuvée, or base wine is made from grapes strategically harvested at slightly earlier stages of ripeness to capture the natural acidity and phenolic complexity. The cuvée goes through primary fermentation in a combination of neutral French barrels and stainless steel tanks. The cuvée, along with a mixture of sugar, yeast and nutrients, are bottled for the secondary fermentation where it’s aged en tirage and benefits from contact with the lees. The wine is then riddled and disgorged using state-of-the-art equipment in the Rava cellar. Finally, a small dosage is added before the sparkling wine is sealed.
